Zuppa con le fave
Sei proprio sicuro di voler preparare la zuppa con le fave? Guarda che ci metti una vita a pelarle perché devi prima sbucciarle tutte, e poi risbucciarle n’atra vota. Magari Milli ha una tecnica segreta, devo ricordami di domandare a Nonna.
Ingredients
- 2 cups twice peeled fresh fava beans
- 2 garlic cloves crushed
- half onion
- 1 roma tomatoes peeled, seeded and chopped
- ground cumin
- chili powder
- 1 large gold potatoes peeled and chopped in medium chunks
- 3 cups water or broth
- parsely
- avocado to serve
- pancetta to serve
- feta
Method
Heat the oil in a large saucepan and add the chopped onion, cook for about 5 minutes.
Add the crushed garlic, cook for another 2 minutes.
Add the chopped tomatoes, cumin, hot chili powder, mix well and cook for another 3 minutes.
Add the potatoes and the water or broth, bring to a boil.
Reduce heat to simmer and add 3/4 of the fava beans, cook until the potatoes are soft, about 25 minutes.
Mix roughly the soup, do not mix too much.
Add the remaining 2 cups of fava beans and cook for about 5 minutes, stirring occasionally.
Meanwhile, cook the pancetta.
Sprinkle with the chopped cilantro or parsley and serve warm with the feta, avocado and the pancetta.
